Long bean (vigna unguiculata) is a subtropical legume found in S. & S.E. Asia and S. China. It is used in Indonesian Gado-gado, Indian Subji, Thai green papaya salad and numerous S. E. Asian stir-fries.
It is an excellent source of fibre, second class protein, vitamin C, folate, magnesium, manganese, vitamin A, thiamin, riboflavin, iron, phosphorus, and potassium.
