Cauliflower is a member of the Brassica family and like Cabbage and Broccoli contains many health supporting nutrients. Characteristic of the Brassica family are phyto-chemicals such as sulforaphane and indoles which inhibit cancer cell growth and DIM (Di-indolyl-methane) which helps regulate the immune system and is anti-viral and anti-bacterial. Fresh cauliflower also contains a good amount of Vit C and the B-vitamin group such as B1, B3, B5 & B6. It also contains magnesium, potassium, calcium, phosphorus and manganese. Manganese acts a co-factor in production of the anti-aging anti-oxidant enzyme SOD (superoxide dismutase), while the potassium is an important intracellular electrolyte used to balance sodium.
