Parsnips are a long white root vegetable related to carrots, parsley, cumin & dill. They are delicious roasted, pureed or added to stews and have a sweet distinctive flavour.
They are high in soluble and insoluble fibre which helps the digestive system process food and absorb nutrients, lowers cholesterol, and gives a feeling of fullness. They are rich in vitamin C & the B-group complex including folate, which is important for pregnant mothers and developing babies as well as to protect against cardiovascular disease.
Scientists at the University of Newcastle at Tyne have also found them to contain the antioxidants falcarinol, falcarindiol, panaxydiol, and methyl-falcarindiol, anti-inflammatory, anti-fungal, and anti-cancer compounds offering protection from colon cancer and acute lymphoblastic leukaemia.
Growing in rich organic soil they contain healthy levels of the minerals iron, calcium, copper, potassium, manganese and phosphorus. Potassium is an important component of cell and body fluids that helps to control heart rate and blood pressure by balancing sodium.
