Chinese turnip (沙葛) Yam bean (pachyhirus erosus )or Bangkuang is used in Taiwan, Singapore and Malaysia as a delicious filling for pie tee, popiah, soon kueh and spring rolls. It can also be used a substitute for water chestnuts.
Thought to have originated in Central America, where it is known as jicama the young tubers are eaten raw in salads, or cooked as a vegetable, or in pickles and chutney.
Peel off the slightly yellow outer skin and eat the white flesh. It has a crisp sweet taste and a high water content. With the price of $5.00/kg this is a great addition to your diet.
