Hummus with a Thai Twist
Did you know that chickpeas are one of the top foods for training triathletes? Their energy is released slowly, giving you health-boosting goodness throughout the day. This dish uses Thai herbs and spices to give a new twist to a Mediterranean favourite. It is a great source of plant-based protein and fibre which combined with tomato, lemon and olive oil helps decrease inflammation, improves cardiovascular and intestinal health, and being high in vitamins and minerals helps build healthy bones. Instructions
  1. The dried chickpeas were soaked overnight, then placed in the steaming basket and steamed for 1 hr over 1 litre of filtered water with 1tsp of Himalayan salt sprinkled over the top before steaming. (Thermomix 1hr/100°C/Speed 1) The steam draws the salt down through the chickpeas into the water making a delicious savoury stock which may be used for soups or stews or even enjoyed as a refreshing drink.
  2. Blend or chop the garlic cloves with the Thai basil first
  3. Add the chickpeas and enough chickpea stock and blend to make a paste
  4. Add the tomato puree, lemon juice and Thai seasoning
  5. Continue blending to desired consistency
  6. Adjust seasoning, garnish and serve
